- 9 cups water
- 3 medium carrots (sliced)
- 3 stalks celery (sliced)
- 1 large onion (chopped)
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 5 cloves garlic (finely chopped)
- 2 jalapenos (chopped, none for classic chicken soup flavor, 1-2 if you like things spicy hot)

- pepper
- 12 oz. chicken breast meat (cooked, chopped, leftovers from this recipe would be perfect)
- 1/2 cup barley (hulled, not pearled)
- 4 Tbsp. fresh parsley, chopped
