    Forget those boxed enchilada kits, these are the most amazing enchiladas!! Even my kids love them! I use a herb roasted rotisserie chicken to cut down time, it’s the perfect amount of chicken to make 10 enchiladas, and I cut out the corn since it tastes better without it.
