This was delicious and easy to prepare. I also made your homemade enchilada sauce recipe, also easy recipe and much better taste than the canned type.

very quick and easy! i used quinoa and since i didn't want to use my oven (summer heat) i cooked it on my stove. still delicious!

Made in the instant pot on a 5 minute cook. I'll add more tortilla strips next time, but overall very delicious.

Made this recipe many times. Always a hit. Never knew how easy it was to make enchilada sauce. So much better than canned!
