- 10 oz. rotel tomatoes (I used the Mexican Style Rotel with Lime & Cilantro but regular Rotel tomatoes will work, too.)
- 1 can corn
- 19 oz. enchilada sauce
- 12 corn tortillas
- 4 cups mexican blend cheese (shredded)
- 1 tsp. cumin
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
- 2 green onions (chopped)
