- 1/4 cup white soy sauce (known as shiroshoyu and available at Asian markets)
- 2 Tbsp. brown rice vinegar (available at Asian markets or use regular rice vinegar)
- 1/2 tsp. granulated sugar
- 1/2 tsp. kosher salt
- 2 tsp. Sichuan peppercorns
- 1 Tbsp. red pepper flakes
- 2 Tbsp. toasted sesame oil
- 3 Tbsp. chicken fat (reserved from the chicken broth or mild oil)
- 3 Tbsp. scallions (chopped, just the white parts)
- 1 Tbsp. grated ginger (or minced)
- 1 Tbsp. minced garlic
- 1/4 cup sesame seeds
- 1 lb. ground chicken
- 2 Tbsp. granulated sugar
- 2 tsp. kosher salt
- 1 lb. ramen noodles (fresh, or any thick fresh noodle you like)
