- 1 1/2 lb. chicken (chopped into small 1-2 inch pieces)
- 1 cup bone broth (homemade, here's my recipe)
- 1 1/4 cups full fat coconut milk (where to get BPA free coconut milk)
- 3 medium carrots (chopped)
- 1 red pepper (diced)
- 5 zucchinis (medium, spiralized into noodles)
- 1/2 lemon
- cilantro (for garnish, optional)
