- 2 stalks lemongrass (Serai Halved and bruised)

- 500 mL water
- 6 red chilli (Large)
- 6 dried chilli
- 2 stalks lemongrass (Serai White stem only, cut into small pieces)
- 150 grams shallots
- 4 cloves garlic
- 1 galangal (thumb-sized, Blue Ginger / Lengkuas)
- 20 grams tumeric (Fresh, Kunyit)
- 5 Tbsp. oil
- 2 Tbsp. coarse salt (To exfoliate Chicken)
