- 1/2 cup chicken broth (homemade or low-sodium canned)
- 3 Tbsp. oyster sauce
- 1 Tbsp. dark soy sauce (plus more for the table)
- 2 tsp. cornstarch
- 1 tsp. sugar
- 1 boneless skinless chicken breast (about 6 ounces, cut into thin 2-inch-long strips)
- 1 tsp. sesame oil (dark Asian)
- 1 Tbsp. peeled fresh ginger (minced)
- 3 cloves garlic (minced)
- 1 scallion (white and green minced)
- ground black pepper (Freshly)
- 1/2 yellow onion (medium, thinly sliced)
- 1 stalk celery (thinly sliced on the diagonal)
- 1 cup green peppers (mix red, yellow and, seeded and cut in strips)
- 10 mushrooms (dried shittake, rehydrated, drained, and thinly sliced)
- 1/3 cup water chestnuts (thinly sliced canned)
- 6 oz. mung bean sprouts (fresh)
- 3 cups cooked white rice
