Description
You won’t believe the rich depth of flavor you can achieve in a short time with this hearty, healthy chili. Chicken stands in for the traditional beef. Instead of baking corn muffins to serve on the side, you simmer cheesy, chili-flecked cornmeal dumplings on top — which help thicken the chili. Don’t forget to serve fresh cilantro, green onions, cheddar, and hot sauce at the table! The recipe is a Yummly original created by Danielle Centoni.

- 2 Tbsp. extra-virgin olive oil
- 1 large onion (chopped)
- 3 medium carrots (peeled and cut into 1/2-inch pieces)
- 1 green bell pepper (or 2 fresh Anaheim peppers, cut into 1/2-inch pieces)
- 3 cloves garlic (minced)
- 1 3/4 lb. boneless skinless chicken breasts (cut into 3/4-inch pieces)
- 6 oz. tomato paste (1 can)
- 1/4 cup chili powder
- 1 Tbsp. ground cumin
- 2 tsp. smoked paprika
- 1/2 tsp. salt
- 1 qt. chicken broth
- 28 oz. diced tomatoes (1 can)
- 15 oz. black beans (1 can, drained and rinsed)
- 15 oz. pinto beans (1 can, drained and rinsed)
- 2 Tbsp. reduced-sodium soy sauce
- 1 box corn muffin mix (8.5 ounces)
- 1 large egg
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese (plus more for serving)
- 1/4 cup corn kernels (fresh, canned, or frozen, thawed)
- 2 Tbsp. diced green chilies (canned, drained; optional)
- 1/2 cup chopped fresh cilantro (for serving)
- 1/2 cup scallions (chopped, for serving)

Directions
- Set a Dutch oven or other 5- to 6-qt. pot over medium-high heat. Add olive oil, onion, carrots, and bell pepper and cook, stirring often, until vegetables are softened, about 5 minutes. Add garlic and sauté about 1 minute more. Add chicken and cook, stirring often, until no longer pink, about 4 minutes.
- Add tomato paste and cook, stirring, until it turns a bit darker, 2-4 minutes. This makes the flavor richer. Now add chili powder, cumin, smoked paprika, and salt and cook, stirring, for about 1 minute to cook spices a bit.
- Pour in chicken broth, stirring to scrape up any browned bits. Add tomatoes, black beans, pinto beans, and soy sauce. Bring to a simmer over high heat, then reduce heat and simmer, covered, for 20 minutes.

That turned out awesome! We could not make the dumplings so we substituted garlic cheesy biscuits.
