- 1 bunch sage (approx 40 leaves)
- 1 cup ricotta cheese
- 2 whole eggs (happy)
- 12 cannelloni (tubes depending on size, I used 10)

- 2/3 cup all purpose flour
- 5 cups milk
- 3 cups grated Parmesan cheese
- 3 nutmeg (grates or pinches of)
