- 8 oz. noodles (dry spaghetti)
- 4 boneless skinless chicken breasts (sliced in half to make less than ½-inch thick)
- 1 Tbsp. olive oil
- 1 onion (medium, cut in chunks)
- 1 green bell pepper (medium, cut in chunks)
- basil
- 4 cups salad (leafy green, mixture)
- 4 tsp. olive oil
- salt

Directions
- Cook spaghetti noodles according to package directions.
- While spaghetti is cooking, in large skillet, heat oil, add chicken and brown on both sides (about 2 minutes per side).
- Add rest of ingredients, bring to a boil, reduce heat to medium-low and cook for 15-20 minutes. (Internal temperature of chicken breasts should be 170 degrees F.)
- Toss leafy greens with olive oil and salt and pepper and serve alongside the chicken.
