- 1 lb. chicken thighs (skin-on, boneless or skinless all work)
- 2 Tbsp. olive oil
- 2 Tbsp. lime juice (about 1 lime)
- 1 tsp. white wine vinegar (regular white vinegar will also work)
- 1 tsp. chili powder
- 1 tsp. ancho chili powder (you can use regular chili powder if you don't have any)
- 1 tsp. salt
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/4 tsp. ground cumin
- 1/4 tsp. smoked paprika
- 1/4 tsp. black pepper
- 2 cups romaine lettuce (chopped)
- 15 oz. black beans (drained and rinsed)
- 15 oz. whole kernel corn, drained (and rinsed)
- 1 cup rice (cooked cilantro lime, you can also use plain white or brown rice)
- 1 cup chopped tomatoes
- 1/2 cup plain greek yogurt
- 1/2 cup guacamole
- lime juice (optional)
- jalapenos (optional)
- hot sauce (optional)
