- 2 sweet potatoes
- 3 mushrooms (large)
- 1 bag brussel sprouts (fresh)
- 3 garlic cloves
- salt (to taste)
- pepper (to taste)
- 1/3 cup olive oil
- 1 stick butter
- fresh thyme
- 1 red wine vinegar (cap of)

Directions
- Pre heat oven to 450.
- Boil sweet potatoes on highway for 30 minutes of until soft.
- Season chicken evenly with salt and pepper and drizzle olive oil on top before placing into oven uncovered for 30-35 min.
