My broth gelled up perfectly which I was hugely excited about because it's never worked properly before!
Made mine in an electric pressure cooker instead of a crock pot, so my cooking time was only about 2 hours.
Also used frozen carrots and celery instead of fresh, which had no effect on the final result.
Because I used the carcasses of store bought rotisserie chickens which can sometimes already have quite a lot of salt, I didn't add any extra when I made it. The carcasses were also frozen (I've been collecting the bones and scraps for about 6 months and made 2 batches).
Cooked down the broth after removing the tallow, and turned about 10 cups of broth into 10 ice cubes which I wrapped with wax paper then froze.
