- 10 carrots (peeled and sliced thick)
- 1 lb. pearled barley
- 3 cloves garlic (minced)
- 12 cups chicken stock (low sodium or water)
- 1 onion (chopped)
- 3 summer squash (optional, quartered and chopped)
- 2 Tbsp. olive oil
- 2 Tbsp. dried parsley (each of, oregano, thyme, and basil)
- 2 bay leaves
