- 1 Tbsp. olive oil
- 1 cup green onions (chopped, including whites, mince the whites)
- 2 jalapeños (seeded and minced, leave seeds if you want soup spicy, omit if you don't like heat)
- 2 cloves garlic (minced)
- 58 oz. low sodium chicken broth
- 2 Roma tomatoes (seeded and diced)
- 1/2 tsp. ground cumin
- salt
- freshly ground black pepper
- 1/3 cup chopped cilantro
- 3 Tbsp. fresh lime juice

So yummy!!! I used vegetable fond instead chicken broth and I used fresh chicken breasts, which I added to the green onions, jalapeños and garlic for about 5 min on high to get some browning. Then simmered on low for about 2 hrs. It came out very juicy. I added lime juice during simmer and to each serving. Delicious!

It turned out great! I made it according to the directions, it was delicious. And then I made a batch to be eaten cold (like Gazpacho soup). That was awesome......very refreshing on hot days.

Easy to make, light flavor. Happened to have all the ingredients. Might add another veggie next time to add nutrients.

I’ll definitely be making this again. I read some of the reviews before making it and I agree, add more lime juice.

I didn’t modify anything, it was a great soup and treat on a cold winter evening. I love that it is low carb and the lime flavor added just the right touch with the avocado. Will add to the rotation!

Very tasty! I omitted the chicken and instead added noodles and it was absolutely fantastic

Wife loved it, I thought it was the most bland dish ever, even with cheese and lime. Would not make again for me though.

My new favorite soup! Added a bit more lime .... only because I love lime.
But it was perfect as is!

Didn’t modify, just added the chips and cheese when served. Pretty darn good soup. Will make again.

Very simple but very tasty soup. The only thing I've changed was keeping the seeds in the peppers. Served it with quessadilla's.
