- 3 onions (medium, thinly sliced)
- 10 whole cloves
- 6 cms cinnamon stick (2½in piece)
- 5 cardamom pods (green, bruised with a rolling pin)
- 2 bay leaves (Indian)
- 1 tsp. cumin seeds
- 2 medium tomatoes (chopped)
- 1 tsp. salt
- 600 grams basmati rice (soaked in cold water for an hour)
- 1 tsp. salt
- 1 liter cooking water
- 100 grams ghee (3½fl oz)
- 1 pinch saffron
- 4 Tbsp. milk
- 2 tsp. rosewater
- 20 grams cashew nuts
- 20 grams shelled pistachios
