- 1 1/2 lb. chicken breast (or tenderloins, chopped into small pieces)
- 1 Tbsp. oil
- 2 Tbsp. butter
- 1 large potato (peeled and diced)
- 2 medium carrots (peeled and diced)
- 1 onion (medium, chopped)
- 2 Tbsp. flour
- 1 qt. chicken broth
- 1 pkg. biscuit mix (mixed according to directions)
- 2 sprigs thyme
- 1 cup peas

Directions
- Coat the pan with butter and oil, then add vegetables and cook until soft, about 5 minutes.
- Add flour to pan and cook two more minutes.
- Add broth and thyme, bring to a boil, and add chicken.
- Drop spoonfuls of dumplings into pot. Cover and steam 8-10 minutes.
- Add peas and cook for 1 minute longer, then serve.
