- 2 chicken breast (portions, ideally with skin and bone)
- 400 mL coconut milk
- 120 grams coconut cream
- 1 Tbsp. jam (chilli)
- 2 Tbsp. light soy sauce
- 1 lime
- 130 grams medium egg noodles
- 1 head chinese leaves (finely sliced)
- 10 cms cucumber (length of, cut into slim sticks)
- 2 Tbsp. peanuts (skinned, and/or cashews, toasted lightly in a dry pan, or use bought dry roasted nuts)
- 3 shallot (fried, or onion flakes - most supermarkets sell them for use as salad toppings or you can buy large jars from Asian stores)
- 1 red chilli (thinly sliced, seeds removed)
- 6 leaves mint (or basil, finely shredded)
