Ingredients

  • 1 cup frozen peas
  • 1/2 cup chopped green bell pepper
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup orange bell pepper (chopped)
  • 8 ounces fresh mushrooms (sliced, or 4-oz. can mushrooms, drained)
  • 2 tablespoons finely chopped onion
  • 1 cup boiling water
  • 1 cup flour
  • 1 1/3 cups cold milk (or cream)
  • 2 cups chicken broth
  • pepper (as desired)
  • 1 teaspoon salt
  • 1/2 teaspoon poultry seasoning
  • 2 cups cooked chicken (diced, or turkey)
  • cooked rice
  • fresh thyme (for garnish)

    Directions

    1. Cook peas, onion, mushrooms and bell peppers in boiling water in a covered pan 5 minutes; drain; save the liquid!
    2. Blend flour with milk or cream.
    3. Combine vegetable cooking liquid, chicken broth, seasonings, slowly stir in flour mixture.
