Description

- 200 grams roasted chestnuts
- 120 grams whole milk
- 50 mL whipping cream
- 50 grams buckwheat flour
- 1/2 tsp. salt

Directions
- Separate the eggs. Combine the yolks with the hazelnuts, milk, and cream in the blender and puree. Add the flour and mix well.
- Beat the eggs with a pinch of salt to form peaks. Fold into the chestnuts mixture.
- Melt a pat of butter in a skillet on medium heat. Pour in batter to form a thin pancake approximately 10 centimeters wide. Cook until golden on both sides, flipping.
- Keep warm until serving.
