- 1 lb. bing cherries (pitted)
- 1/2 cup brown sugar
- 5 star anise
- 1 1/2 cups brandy (or liquer of your choice)
- 1/2 cup roasted pistachios
- 1/4 cup sugar
- 1 1/2 cups all-purpose flour
- 1 tsp. star anise seeds
- 1 1/2 tsp. anise powder
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 stick unsalted butter (at room temperature)
- 1/2 mascarpone cheese
- 1/2 cup sugar
- 2 tsp. vanilla extract
- 1 tsp. pistachio extract (you can omit if you do not have it)
- 15 cherries (macerated, cut into half)
- 3 large eggs (at room temperature)
- 1/2 cup roasted pistachios (whole)
- 4 Tbsp. brandy (from the macerated cherries)
- 40 cherries (pitted and cut into half for decoration, optional)
- 3 Tbsp. turbinado sugar (to sprinkle on top of the cake before baking.)
- 2 cups heavy cream
- 1 cup powdered sugar
- 1 tsp. vanilla extract
- 1/4 cup brandy (from the macerated cherries)
- 1/2 cup chopped pistachios (coarsely)
