I was craving a quick version of cherry pie and stumbled on this, and I am so glad! I had about 1.5 cups of pitted cherries in the freezer, so I used those (no thawing necessary, BTW) and halved all the remaining ingredients. Baked in a loaf pan for about 45 minutes (tented after 30-35 minutes), and it was perfect.

I made these with raspberries and added some white chocolate chips in with the berries then melted a little bit of the white chocolate and drizzled it on top! Perfect!

They were yummy. Accidentally cooked it a bit long...the top wasn’t too brown but the crust was, so watch that if you’re making it.

I love these pie bars! I have made them several times with apricot filling and they are delicious. To keep the bars from getting soggy I made a chunky jam thickened with tapioca and use that instead of the fruit mixture called for in the recipe.

These are truly amazing . The crust comes out crunchy and buttery which balances perfectly with the sweetness of the cherry. I will be making these again . The only bummer is if you don't eat them all in one day the crust gets a bit soggy.
