- 1/4 tsp. sea salt

- 2 Tbsp. balsamic vinegar
- 2 tsp. Dijon mustard
- 2 tsp. honey (or maple syrup or agave nectar)

- 4 arugula (big handfuls)
- 1/2 lb. cherries (about 2 big handfuls, pitted, halved and quartered)
- 2 stalks celery (chopped)
- 3 oz. goat cheese (crumbled, to yield about ⅓ cup crumbled goat cheese)
- 1/3 cup shelled pistachios (or almonds, choose slivered or sliced almonds and you can skip the chopping step)
