Description
Developed by Mississippi seafood chef Tyler Edwards, Seafood Hoppin' John is a recipe for the jambalaya-like rice bed that your choice of fish fillet sits upon. We recommend using a firm fish like triple tail or redfish. Of course as always, choose domestic seafood and other ingredients wherever possible.

- 1 lb. lump crab meat (fresh, local jumbo)
- 3 strips bacon (try BigBadBreakfast brand!)
- 1 cup basmati rice
- 1 cup black eyed peas (fresh)
- 2 1/4 cups shrimp stock
- 1/2 cup diced onion (each finely, and celery)
- 1/2 cup red bell peppers (each finely julienned, and tomato)
- 3 cloves minced garlic
- 1 bay leaf
- 1/3 cup chopped parsley (roughly)
- 1 lemon
- 1 Tbsp. Creole seasoning
- 1 Tbsp. butter

Directions
- Render bacon fat in a large pot with the butter.
- Saute in onion, garlic, celery, and creole seasoning until lightly caramelized.
- Add uncooked basmati rice and stir until combined.
