- 1 1/2 cups chopped onion
- 5 cups russet potatoes (diced peeled, about 5 medium)
- 1 stalk celery (chopped, 1/2 cup)
- 1 chicken broth (carton, 32 oz, 4 cups)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup all purpose flour
- 1 1/2 cups half and half (I used half skim milk and half whipping cream)
- 8 oz. cheddar cheese (shredded American and, blend, 2 cups, I could find a blend so I used all cheddar. Next time I am gonna try 1 cup Velveeta and 1 cup cheddar)
