- 400 grams chickpeas (tin, 1.5 cups, or 4 bean mix, mashed slightly)
- 2 cups low fat cottage cheese
- 1 cup grated cheddar (extra light, / tasty cheese)
- 8 eggs (beaten)
- 1 onion (large, finely chopped)
- 4 cloves garlic (finely chopped)
- 1 large carrot (medium to, grated, about 1-1.5 cups)
- 1 zucchini (large, grated, about 2 cups)
- 1 sweet potato (small, peel, sliced into ½cm circle slices then grilled and chopped into 1cm squares)
- 2 cups cherry tomatoes (cut in half)
- 1/2 cup olives (Kalamatta, finely chopped)
