  • 1 tablespoon olive oil
  • 1 onion (medium, diced)
  • 2 cloves garlic (minced)
  • 1 green pepper (diced)
  • 1 cup frozen corn kernels
  • 15 ounces black beans (drained and rinsed)
  • 15 ounces pinto beans (drained and rinsed)
  • 15 ounces red kidney beans (dark, drained and rinsed)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (or more to taste, optional)
  • 2 cups salsa (jarred chunky-style)
  • 9 cups corn tortilla chips
  • 1 1/4 cups shredded cheddar cheese
  • 1 1/4 cups shredded pepper jack cheese

    Great base. I didn't have black or pinto beans on hand so I used two cans of kidney, one can of corn, one can of rotel, and a white onion. Used all of the spices and added just a touch of menudo spice. Cooked the bean mixture for ten minutes, then baked for 20.

    Great! I have to feed 5 who’s spice limits range from “black pepper is too hot” to “where are the habaneros?” I kept with the recipe as written except the chili powder and let the additional toppings of chopped jalapeños and hot salsa allow for each to their own taste.

    I have made this recipe a few times now. It is absolutely delicious. Wonderful flavors! I tried using Chorizo instead of the ground beef and wow what a difference maker. It brought such a yummy smoky flavor to this dish. I have also used it as my meat mixture for nachos. Poured a little queso on top. Just yummy!

    I added more of each of the suggested spices, cracked pepper and tomato paste for a richer flavor. Good recipe, quick and easy, thanks

    When I made this rather than using the nacho chips I used the Frito-Lay chips crushed at the end you can use sour cream after today to course and a little chives cilantro Birds it going down hope you all can try to enjoy let me know how you like it thank you Anna Rodriguez

    Love! Delicous way to revamp a classic taco!
    I’ll give is a 4.5! But I didn’t really follow the recipe to a T. I’m not a vegetarian so I added ground turkey and I also added a can of diced tomatoes. I forgot to purchase tortilla chips but I had corn tortillas so I fried them to make tortilla chips. I wish I knew a way to prevent the tortilla chips from being soggy after it’s baked. Perhaps the liquid from my diced tomatoes and the beans made the chips a little soggy. The flavor was excellent and I definitely added way more cumin, paprika and chili powder than was suggested. I also add a garlic powder. I would also say that the recipe calls for more cheese to live up to its name. There wasn’t much cheese in my opinion.

    Delicious! Followed the recipe closely (though I forgot to buy kidney beans and used 1 can of corn instead of 1c frozen corn), and it turned out great! Love the different textures of tortilla chips, from crunchy to soft. Will make again, though not great for leftovers/meal prepping (tortilla chips all get soggy).

    Made this tonight, so good and plenty to feed at least four. I used taco seasoning on some hamburger to add to the flavor.

    it was really good! only thing is next time i may break the chips up a bit instead of leaving them whole. otherwise great flavor! i added ground turkey and it was delicious!

    This turned out to be pretty good. I will definitely make it again. I added extra chips and cheese and it made a large 10x13 dish.
