  • 1 spring onion (finely chopped)
  • 2 cups milk
  • 1 ounce aged cheddar cheese (grated)
  • 2 tablespoons blue cheese (diced)
  • 2 tablespoons fresh parsley leaves (chopped)
  • bread slices (thick, to serve)

    Directions

    1. Gently heat creamed corn, onion, milk and cheese over low heat for 5-10 mins, stirring, until the cheese melts.
    2. Ladle into serving bowls. Sprinkle with blue cheese and parsley. Serve with thick bread slices.
