  • 4 tablespoons butter (coarsely chopped)
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 5 1/4 ounces swiss cheese
  • 1 head cauliflower (cut into florets)
  • 1 yellow onion (peeled and finely chopped)
  • 1 1/2 ounces Parmesan (finely grated)
  • 1/4 cup flaked almonds
  • 2 tablespoons flat leaf parsley (coarsely chopped)

    Directions

    1. Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, for 2 mins or until the mixture thickens and bubbles. Gradually stir in the milk and continue to cook, stirring, until the sauce boils and thickens. Remove from heat and stir in the Swiss cheese until melted.
    2. Place the cauliflower and onion into a 5-quart slow cooker and toss to combine. Season to taste. Pour over the cheese sauce and toss to coat. Sprinkle with Parmesan.
    3. Cook, covered, on low, for 3 hours. Sprinkle with almonds and parsley to serve.
