Delicious.. I simply put in the ingredients I already had on hand & found this dish .. It was something quick & easy to make for my grandkids & they loved it... I did only use 1 type of cheese & instead of shredding the zucchini I cut it into bite sized pieces..I would definitely make this dish again...

This was okay.
I modified the recipe a bit, adding an extra zucchini and two chopped bell peppers. I also didn't have the fancy butter, so I just used olive oil.
I don't feel like the cheese added much, so the next time, I will likely leave it out and go for more of a pilaf. Still, I appreciated the author's timing and flavor profile, and will use this recipe as a jumping-off point.
