- 2 Tbsp. light soy sauce
- 1 Tbsp. corn flour
- 6 strips streaky bacon (sliced)
- 1/2 onion (large, peeled and diced)
- 4 cloves garlic (peeled and minced)
- 1 small carrot (peeled and diced)
- 300 grams fresh mushrooms (diced, use a variety of like brown button, white button, shiitake, Portobello for flavour)
- 1 3/4 cups long grain rice (rinsed and drained)
- 1 Tbsp. salted butter
- 625 mL low sodium chicken stock (2½ cups)
- 125 mL milk (1/2 cup, can substitute it with chicken stock)
- 250 mL heavy cream (1 cup)
- 1 3/4 tsp. table salt (2 teaspoons kosher salt)
- 1/2 tsp. freshly ground black pepper
- 200 grams shredded cheddar cheese (2 cups packed)
- 40 grams grated Parmesan cheese (1/2 cup)
- 40 grams dry bread crumbs (1/3 cup)
