- 1 whole chipotle pepper (in adobe sauce finely chopped, optional)

- 1/3 cup fresh cilantro (chopped, plus more for serving)

Turned out great! I didn't have riced cauliflower so I just chopped a head of cauliflower and I think the texture was better than with riced. I also added chopped green onions on the top after taking out of the oven along with sliced avocados. YUM!
