- 15 oz. black beans (or red kidney beans, rinsed and drained)
- 1/4 cup reduced fat italian salad dressing
- 2 Tbsp. reduced sodium taco seasoning
- 1/4 tsp. ground cumin
- 6 flour tortillas (8 inches)
- 1 can corn (drained, or about 1 1/4 cups of frozen corn, optional)
- 3/4 cup sour cream (*Note: I used 1/2 cup)
- 2 cups shredded mexican cheese blend (or your favorite cheese)
- 1 cup shredded lettuce
- 1 medium tomato (chopped)
- 1/4 cup fresh cilantro (minced)

This is delicious! Loved it and was a hit with the husband and picky toddler. I didn't include corn because I'm not a fan and used fajita seasoning instead of taco and kidney beans instead of black but only because that's what I had on hand. I think next time I may use a smaller casserole dish in order to get more layers. Will become a staple in my house for sure! So much easier than making enchiladas and actually more tasty! I love the tartness that the Italian dressing added.
