I love this recipe. Its easy to put together and tastes like a deconstructed enchilada. I touted with cilantro, lime, avocado, and jalapeno. so good!

This turned out terrific. I didn't add 1 tbsp chipotles in adobo. Used a half of an onion and substituted garlic powder with chopped garlic. Turned out well and will be on my list of low carb dinners.
