Used Monterrey Jack (that’s what I had on hand) and used only one huge jalapeño. I figured the jalapeño would help make up for the pepper Jack since there was already jalapeños in the dish. Really simple recipe and super easy to throw together. My husband loved it! A great new chicken recipe and low carb. Will definitely make it again.

Loved it! I didn’t use jalapeño peppers, just cut up red and orange peppers, and cut up chicken breast since I didn’t have chicken tenders!

I loved it. Only changes were that I didn’t have chicken tenders or breasts, just bone-in thighs. So I removed the skin, cooked them longer and then chopped the chicken up before baking again w the veggies and cheese. Ate over rice 🍚
