- 1 Tbsp. vegetable oil
- 1 lb. boneless skinless chicken breasts (cut into 1/2-inch cubes)
- 2 cups water
- 1 cup salsa
- 1 pkg. rice (ZATARAIN'S® Cilantro Lime)
- 1 cup shredded Mexican cheese blend
- 2 Tbsp. chopped fresh cilantro

Directions
- Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
- Stir water, salsa and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
- Stir in chicken. Sprinkle with cheese. Cover and cook 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with cilantro.
