Great soup! Flavor is wonderful. I use about 6-7 poblano peppers and we love it!
An easy version and substations we also like are: 1.5 lbs ground turkey instead of chicken, corn, beans, a large can of Mexican green chilies or 2 small instead of poblano peppers. Add shredded cheese after soup has cooled down (from a boil) about 10 minutes, so it does not clump. Can add more than 1 can each corn or beans to make soup thicker.
