I just made this recipe (halved the recipe for two) after Thanksgiving with a few substitutes, one being leftover turkey pieces instead of chicken, steamed the broccoli some, pre-cooked Orzo instead of rice, and fresh turkey broth instead of chicken broth (cutting it to 1/4 cup mixed with 1/2 can of cream of chicken soup for the 1/2 recipe). I added some diced celery pieces to sauté with the onions & minced garlic. For the topping, I substituted Crispy Fried Onions (dropped some in casserole, too) instead of potato chips with the divided pieces of cheese. Serve with leftover cranberry sauce and it makes a tasty after-Thanksgiving casserole variation.

i thought this was great as a side dish, very filling. i did add salt and pepper to taste and used about 2 more oz of Velveeta than what it called for. it does need salt and pepper when you plate it but i will definitely make this again.
