These are pretty good, but not to die for. Something is missing in the sauce. Would be willing to have again but with either a store bought sauce or jazzing up the sauce somehow

wow! I used chedder and jalapeno tortillas and spinach tortillas. also added frozen veggies like peppers and onions. delicious!

I added a few extra seasonings like cayenne pepper, chili powder, garlic powder, onion powder, oregano, salt+pepper, as well as doubling the cumin and paprika. I also poured on the cheese :) turned out pretty good

It was really good. Next time I will add more corn and less sauce. Other than that it was good!!

A bit bland for my taste but overall that can be fixed with more enchilada sauce but then it'll be a bit more spicy.

The prep and cook time was short amd easy. Perfect to just throw together. I added some shredded chicken. probably could have used some garlic as well but over all was very good and cheesy.

Decent tasting and quick to make. Next time I will have to try seasoned black beans. This is going on my quick to make in bulk list.

So yum! I used corn tortillas and topped with Avocado and sour cream. Definitely a keeper.

Delicious and so easy! I used 1 can each of black beans and refried beans - turned out great!

Great recipe that was super easy to adapt to be vegan! Any leftover filling is great on rice for a filling breakfast or a light lunch :)

Absolutely loved it. i made it up the night before so coming home to just heat it up was a treat in itself.
