It was ok. I ended up cooking the left overs with scrambled eggs. This moistened and lightened the texture. Adding the salsa, sour cream, and some avacado worked pretty good.

Delicious! I substituted zucchini for the corn and beans and it came out great

That is soooo good. Will definitely make again. Had to use Monterey Jack and cheddar cheese as that's what I had on hand. Very delicious, especially once garnishing with green onion and cilantro.
