- 1 lb. whole wheat penne (Farfalle and ziti are also great options.)
- 3 Tbsp. butter (You can also use olive oil if you prefer.)
- 3 garlic cloves (minced)
- 3 Tbsp. flour
- 1 1/2 cups chicken stock (low-sodium)
- 1 1/4 cups milk
- 1 1/2 tsp. dried oregano
- 1 1/2 tsp. crushed red pepper (optional)
- 1 1/4 cups fontina cheese (grated, divided)
- 1 cup shredded part skim mozzarella cheese
- 1/2 cup grated Parmesan cheese (divided)
- salt
- 2 cups chicken breast (shredded or chopped, I used the breast meat from a store-bought rotisserie chicken because I had one in the fridge, but you can also roast or poach your own chicken breasts.)
- 1/4 cup panko breadcrumbs (whole wheat)
