- 1/4 cup canola oil
- 2 lb. chicken breast meat (* cubed, or chicken tenders)
- 1/2 Tbsp. ground cumin
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. salt
- 1 tsp. ground black pepper
- 1 Tbsp. butter
- 3/4 cup white onion (or chopped yellow)
- 1 Tbsp. minced garlic
- 1/4 cup poblano pepper (chopped roasted)
- 1 1/2 Tbsp. green chilli pepper (finely diced, I used a serrano***)
- 1/3 cup flour (I recently used Better Batter Gluten Free Flour, and it worked great too)
- 4 cups chicken stock
- 2 Tbsp. salsa verde
- 1/2 Tbsp. chili garlic paste
- 1/2 Tbsp. chipotle (Tobasco)
- 1/2 cup heavy cream
- 1 cup white beans (from a can, or cooked)
- pico de gallo (garnish, optional)
- white rice (garnish, optional)
- 3 green onions (sliced, garnish, optional)
