- 2 lb. large shrimp (peeled and deveined)
- freshly ground black pepper (to taste)
- 2 cups Mexican crema
- 1 cup asadero (grated, or quesadilla cheese, can also substitute with Monterey Jack or Muenster)
- 1 1/2 cups oaxaca cheese (grated)
- 1/2 cup cheese (grated añejo, or parmesan)
- 4 scallions (white and light green parts thinly sliced, for garnish, optional)
