Description
Chourico is a Portuguese sausage with a spicy flavor that's most similar to linguica, which can be substituted if you can't find the former. Here the sausage is cut into cubes and used as a filling, along with mozzarella cheese, for these pinwheels, which start with a homemade yeast dough that will fill your kitchen with its wonderful aroma as it is left to rise. Once the slices are on the baking sheet, allow them to rise for a few minutes before popping into the oven.

- 200 grams wheat flour
- 100 grams water
- 25 grams olive oil
- 1 packet dry yeast (4.6 grams)
- 1 pinch salt
- ketchup (to taste)
- dried oregano (to taste)
- 100 grams grated mozzarella cheese
- 50 grams Chourição (or other spicy sausage, cubed)
- 1 egg yolk (for brushing)

Directions
- Place the flour in a large bowl with a pinch of salt.
- Open a hole in the middle and add the yeast.
- Pour the water and the olive oil and stir to dissolve the yeast. Knead a little until the dough does not stick to the hands.
