- sourdough starter (Unfed, straight from the fridge preferably)
- buttermilk (A little, or cream for brushing on the scones)
- 300 grams all purpose flour (plain /, plus more for rolling if needed)
- 1 Tbsp. baking powder
- 1 Tbsp. sugar
- 1 tsp. salt
- 57 grams unsalted butter (frozen butter, coarsely grated)
- 115 grams grated cheddar cheese (mature/sharp)
- 150 grams herbed cream cheese (cold, cubed I used Boursin)
- 150 grams sourdough starter (heaped 1 cup unfed, stirred use as much as needed)
- 2 Tbsp. cream (or buttermilk for the dough, use if needed)
- 2 Tbsp. cream (or buttermilk to brush on scones)
