- 2 tsp. unsalted butter (softened, plus more for ramekin)
- 3 tsp. grated Parmesan cheese (for ramekin)
- 1 Tbsp. all purpose flour
- 1/3 cup whole milk
- 1 pinch coarse salt
- 1 pinch paprika
- 1 large egg yolk
- 2 large egg whites (at room temperature)
- 1/3 cup grated cheese (tightly packed, about 1.25 oz, I used gruyere and finely grated it; you can also use an aged, sharp cheddar, Swiss, or an aged mountain cheese you enjoy)
- 4 Parmesan cheese (x 2 3/4 inch ramekin and coat it evenly with, . Set the ramekin on top of a small sheet pan, in case of spill-over during baking, you'll be thankful for the baking sheet.)

I can now finally say that I have made a cheese souffle! My expectations were high, but this recipe really followed through. This is now a family favorite!
