Interesting, tasty breakfast dish. I was a little skeptical about the lack of egg in the batter, but the results made a believer out of me. We didn't have sriracha so substituted chipotle Tabasco with good results. Also absent mindedly used raw sausage bits instead of cooked, but they cooked just fine in the waffle.
