- 1 Tbsp. flour
- 8 oz. beer
- 12 oz. cheddar cheese
- 1 Tbsp. Dijon mustard (French's)
- salt (to taste)
- pepper (to taste)

Directions
- MELT butter in small saucepan over medium heat.
- WHISK in flour and cook for a minute or two until golden.
- SLOWLY pour beer in while whisking constantly so the mixture slightly thickens. Cook for 5 minutes while stirring.
- REDUCE the heat to low and stir in the cheese and Mustard until melted. Season with salt and pepper as desired. Serve with Jalapeño Pretzel Dogs.
