- celery ribs (diced)
- medium onion (diced)
- jalapeno (seeded and diced)
- garlic (cloves, minced)
- 1 Tbsp. oil
- 12 oz. lager beer (each)
- 1 cup chicken stock
- 1 cup butter
- 1 cup flour
- 1 cup heavy cream
- 12 oz. shredded sharp cheddar cheese
- salt
- green onions (Chopped, to garnish, optional)

Directions
- Cook brats according to package directions. Cut into bias-slice pieces.
- In a skillet, cook and stir the celery, onion, jalapeno and garlic in oil over medium heat until tender; about 7-8 minutes.
- Add 1 bottle of beer, simmer until reduced by half; about 5 minutes.
